Dinner’s Ready: Kim Wakefield’s Olive Garden Chicken in the Crockpot

“I love being home, and my weekends consist of the three Rs: resting, relaxing, and rejuvenating,” shares Kim Wakefield of Mobile, AL. Kim has been teaching for the last 24 years and is currently a Pirate at Phillips Preparatory School. She wears many hats there, working as the computer science teacher, yearbook advisor, and broadcasting teacher, and she handles the school’s social media accounts.

“Teaching my students to write, edit, photograph, and design allows us to have the best yearbook possible. “Creating the yearbook is a labor of love. Making the book takes so much time and effort since we create it from scratch.”

Kim is passionate about crafting visuals, editing videos, and creating memorable content for school events.
“In my spare time, I enjoy reading thrillers! Audiobooks are my favorite because I can listen to them on my way to and from work. Other than teaching and reading, I am just a homebody.”

Kim and her husband Ray have been happily married for twenty years and have one son, Brycen (13). He is in 8th grade, plays soccer, runs track, serves as a middle school ambassador, and excels in honors classes.

“He holds a special place in our hearts as our one and only child, and his journey into our lives was a blessing after six years of infertility,” Kim shared. “Being with my boys is where I find unparalleled joy and fulfillment.”

Crockpot cooking is important to Kim, even for a family of three. She loves to grab recipes from the The Magic Slow Cooker page on Facebook, where this Olive Garden Chicken recipe resides.

“Crockpot meals and leftovers are important, especially with our son’s busy schedule,” Kim exclaimed. “I honestly don’t know how big families do it. Juggling kids, their hobbies, work, and life is hard. Crockpot recipes are great for busy families, and this feeds an army – or just the three of us with leftovers!”

Olive Garden Chicken in the Crockpot

Ingredients:

  • 1.5 lbs. boneless skinless chicken breast (1.5-2 pounds works fine)
  • 16 oz. Olive Garden Italian dressing (or any Italian dressing you like) Note- Olive Garden dressing is high in sodium and can be salty. Choose a lower sodium dressing if desired.
  • 1/4 cup grated parmesan cheese
  • 1/4 tsp. black pepper
  • 8 oz. cream cheese

Add these items after cooking time is up:

  • 16 oz. penne pasta cooked according to package directions and drain well
  • 1/4 cup parmesan cheese

Instructions:

  • Add chicken breasts to the slow cooker.
  • Pour over one 16-ounce jar of Olive Garden Italian dressing (or any Italian dressing you have on hand.)
  • Shake over grated parmesan cheese and ground pepper. Add one block of cream cheese.
  • Place the lid on the slow cooker and cook on HIGH for 4 hours or low for 5-6.
  • Shred the chicken with two forks right in the slow cooker.
  • Cook 16 ounces of pasta according to the package directions on the stove-top. I use penne pasta for this recipe.
  • Add the drained pasta to the slow cooker along with the sauce and shredded chicken, stir.
  • Sprinkle over more parmesan cheese if desired. I also garnished with a touch of oregano and black pepper.

Ways to alter it:

  • Serve over rice and omit the pasta.
  • Serve with steamed vegetables.
  • You can leave out the cream cheese or add a cup of heavy cream at the end of cooking time is desired. Though the sauce will be thinner.
